Swire spins off restaurant arm

Swire Hotels has created a new restaurant division to manage its stand-alone restaurant businesses.
Swire Restaurants will become the parent of Plat du Jour, the company’s first standalone eatery, Public and Ground Public in Quarry Bay, The Continental in Pacific Place – and a new restaurant called Mr & Mrs Fox, planned to open in Quarry Bay in August.
Described as “a modern steakhouse and neighbourhood hangout”, Mr & Mrs Fox will be located over three floors in the recently launched Taikoo Place Apartments on 23 Tong Chong St.
Designed by Charlie & Rose, a Hong Kong architectural and interior design company, Mr & Mrs Fox is a 250-seat multi-level bar and restaurant with a craft beer house at street level, raw bar and steakhouse on the first floor and private dining room with its own terrace in the attic.
Joey Sergentakis takes on the role as head chef for Mr & Mrs Fox. He was previously Chef de Cuisine at Café Gray Deluxe for five years after working in New York and European fine dining restaurants with chefs Daniel Boulud, Gray Kunz and Philippe Rochat, amongst others.
Plat du Jour is a 60-seat restaurant offering authentic French regional cuisine.
