Chef Frederic Vardon opening branch of Le 39V

Frederic Vardon chef - Le 39VFrench chef Frederic Vardon will open the Hong Kong branch of his Paris restaurant Le 39V this month.

Opened in 2010 and named after its address, 39 Avenue George V, the restaurant features neo-classical French cuisine that combines innovation and rich family traditions, thanks to influence from his charcutier/caterer father.  

Returning to Hong Kong after his former post as Alain Ducasse’s corporate chef during Spoon’s opening in Hong Kong, Vardon will launch Le 39V on the 101st floor of the International Commerce Centre (ICC) in west Kowloon.

Next to the newly renovated Inakaya Japanese restaurant, the Hong Kong branch of Le 39V offers an unobstructed view of Victoria Harbour. Its kitchen team will be managed by executive chef de cuisine Nicolas Raynal, Vardon’s right-hand man who splits his time between Hong Kong and Paris.

Menus will be synchronised with the Paris restaurant and feature such Vardon classics as Niçoise-style red mullet, John Dory from Brittany, roasted lamb rack with confit shoulder, souffles with Grand Marnier, creamy orange and verbena sorbet, and strawberries and wild strawberries with iced meringue cake.
