Aqua Restaurant Group reveals double vision

Aqua Restaurant Group has unveiled plans to open two flagship restaurants and an innovative bar at the Tai Kwun Central Police Station development.

With the bar sitting between them, the restaurants will reflect Hong Kong’s East-West heritage. Launching in September, the restaurants will occupy a prime location on the first floor of the historic Headquarters Block, the former Police Officers’ Mess.

Covering nearly 10,000sqft, the reimagined colonial-style space will pay homage to both the British and Chinese culinary history of Hong Kong.

In the East wing, The Chinese Library will celebrate regional Chinese cuisines that have become popular in Hong Kong over the years, featuring dishes inspired by group founder David Yeo’s collection of cookbooks.

Statement restaurant in the West wing will showcase innovative British cuisine, echoing Hong Kong’s colonial heritage while also displaying some of the more avant-garde culinary directions found in London today.

Linking these two restaurants is The Dispensary, a lounge bar adorned with nostalgic ornaments that offer clues to Hong Kong’s colourful past.

Yeo, who conceptualised the project, says it is hoped the two restaurants “will honour the wonderfully rich East-West heritage of this great city”.
