Japanese chain Menya Kokoro to open in Singapore

Japanese restaurant chain Menya Kokoro, known for its authentic maze-soba cuisine, is launching in Singapore at Suntec Cit

The 72-seat store opening on October 10 is the latest in an expansion that has seen the brand opening 27 outlets around the world over the past four years. It already operates in Japan, Indonesia, Spain, Thailand and Vancouver.

The new Menya Kokoro Singapore outlet will serve the same Japanese dry ramen dishes that have brought the restaurant success in Tokyo, together with a number of creations exclusive to the local market. It will be opened by the brand’s founder, Chef Takuma Ishikawa, who trained under the original master and creator of the maze-soba style, first sold under the Menya Hanabi restaurant brand.

The noodles, made with multi-grain flour consisting of over 35 per cent whole wheat, are notable for their fine-spun strands and for being cooked for precisely eight minutes and 40 seconds.
